Ingredients

  • 4 pounds chicken wings split tips removed
  • 2 tablespoons baking soda aluminum free
  • 2 teaspoons kosher salt or 1 teaspoon of salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika or smoked paprika

Instructions

  • Preheat your oven to 425°F. Line two rimmed baking sheets with foil and fit them with wire racks. You can also use parchment-lined baking sheets.
  • Spray the wire racks with non-stick spray. Use paper towels to pat the wings VERY dry and place them in a large bowl.
  • Combine the salt, pepper, garlic powder, paprika, and baking powder in a small bowl. Add this mixture to the large bowl to coat the wings.
  • Arrange the coated wings in a single layer on the wire racks, not touching each other.
  • Bake the wings until cooked through and their skin is browned and crispy, for about 40 minutes turning every 5-10 minutes to ensure all sides get crispy.
  • Serve immediately. They pair well with blue cheese or ranch dressing.
