Slaw

large jicama (about grapefruit size)
or 3 small (peeled and shredded)
½
head red cabbage
shredded

carrots
peeled and shredded
1
large red pepper
stem and seeds removed, sliced thin
½
white onion
sliced thin
Dressing
½
cup
olive oil
¼
cup
rice vinegar
juice of 2 limes
2
tablespoons
honey
½
teaspoon
ancho chili powder
regular chili powder can be used as a substitute
½
teaspoon
red chile flakes
optional
1
teaspoon
kosher salt
½
teaspoon
freshly ground black pepper
¼
cup
finely chopped cilantro leaves
Instructions
Prepare the dressing
In a small bowl, whisk together the dressing ingredients
Prepare the slaw
Prepare each of the slaw ingredients as described. It is easiest to use a food processor, if available, to shred jicama and cabbage.
Add slaw ingredients to a large bowl. When ready to serve, toss slaw with dressing. Cover and refrigerate until ready to serve.
