Using a burrito size tortilla, layer lettuce, tomatoes, avocado, bacon, chicken, and cheddar cheese and wrap. This is a delicious sandwich alternative for lunch.
(This step can be done ahead of time. Cooked chicken is good in the fridge for up to 3 days)
Season chicken with salt and pepper on both sides.
Preheat a large pan on medium/high heat and add 2 tablespoons olive oil.
Cook for about 5-7 minutes each side until chicken reaches internal temperature of 165°F.
Assemble the ingredients
Slice pan-fried or grilled chicken, chop lettuce, tomatoes, and avocado, and grate cheese. Mix aioli, sour cream and Greek yogurt.
Put a large burrito size tortilla on a cutting board, layer with about ⅓ cup chopped lettuce, ¼ cup tomatoes, avocado, a tablespoon aioli/yogurt mixture, few slices of grilled chicken, and top with ¼ cup cheese.
Preheat a pan on medium high heat. Place wraps edge side down and grill for a couple of minutes, until brown/golden color, then flip and grill on the other side.
Notes
For more texture, try grilling the wraps on the stove after assembling them. If making this recipe for lunch, wrap them individually in foil so they stay warm.This recipe calls for grilled chicken breasts. Cooked, shredded, rotisserie would be good substitutes.
