white wine vinegar

shaved parmesan cheese
Instructions
Make the dressing
Whisk the oil, vinegar, kosher salt, and freshly ground pepper in a measuring cup or a small bowl
Prepare salad
Wash arugula and baby spinach
Place washed arugula, baby spinach, red onion, tomatoes, and olives in a large serving bowl.
Top the salad with shaved parmesan cheese.
Add desired amount of dressing to serving bowl and mix well using tongs just before serving and serve on individual plates.
