Combine ketchup, honey, mustard, jalapeno, rice vinegar, hot sauce, sugar, curry powder, paprika, soy sauce, garlic, canola oil. Worcestershire sauce, lemon juice, and pepper in a medium saucepan. Bring the sauce to a simmer; cook for 15 minutes until smooth and thickened.
Beans
Place the beans in a a large sauce pot; coven them with water and allow the beans to stand overnight or for at least 2 hours.
Discard the soaking water, rinse the beans, and cover them with cold water. Add the barbecue sauce, onions, ginger, chipotles, bacon, maple syrup, molasses, apple juice, tomato puree, cider vinegar, and tamari.
Bring the mixture to a boil, reduce to medium heat, cover, and simmer until the beans are tender and the sauce has thickened, 1 to 2 hours.
