Simple Grilled Vegetables

Grilling vegetables is a great way to enjoy that smoky barbecue flavor on some of your favorite veggies!. Here, balsamic vinegar adds some lovely depth and sweetness to the smoky flavor. Feel free to get creative with your vegetable choices or use whatever is on hand.

Equipment

  • 1 outdoor grill (gas or charcoal)

Ingredients
  

  • 4 ea carrots peeled and cut in half
  • 2 ea onions quartered
  • 1 ea zucchini cut into 1/2-inch rounds
  • 1 ea red bell pepper seeded and cut into cubes
  • ¼ c olive oil extra virgin
  • sea salt to taste
  • freshly ground black pepper to taste
  • balsamic vinegar

Instructions
 

  • Heat the grill to medium-high
  • Prep vegetables as noted above, keeping carrots and onions separated from remaining ingredients
  • Toss vegetables in olive oil
  • Place carrots and onions on the grill first because they will take the longest to cook
  • Cook the vegetables for 3-4 minutes on each side
  • Transfer to a serving dish, and drizzle with olive oil and balsamic vinegar
