Maple Baked Beans
This dish can be made with vegetarian or traditional bacon, and is a more modern version of the classic Boston baked beans.

Ingredients
- 1 pound dried great northern beans (about 2 cups)
- 2 c Honey Jalapeno Barbecue Sauce
- 1 ½ c onions chopped
- 1 tbsp fresh ginger grated
- 2 whole canned chipotle peppers in adobo sauce, drained
- ⅙ c bacon bits (or soy "bacon" bits)
- ½ c pure maple syrup
- ¼ c molasses
- ¼ c apple juice
- 1 c tomato puree
- ¼ c cider vinegar
- 1 tbsp tamari
Honey Jalapeno Barbecue Sauce
- 2 c ketchup
- 2 c honey
- ½ c Dijon mustard
- ½ c jalapeno pepper seeded and minced
- ¼ c rice vinegar
- 2 tsp hot sauce
- ⅓ c sugar
- ⅛ c curry powder
- 1 tbsp paprika
- 2 tsp soy sauce
- 4 cloves garlic minced
- 2 tsp canola oil
- 2 tsp Worcestershire sauce (optional)
- 2 tsp lemon juice
- 1 tsp freshly ground pepper
Instructions
Honey Jalapeno Barbecue Sauce
- Combine ketchup, honey, mustard, jalapeno, rice vinegar, hot sauce, sugar, curry powder, paprika, soy sauce, garlic, canola oil. Worcestershire sauce, lemon juice, and pepper in a medium saucepan. Bring the sauce to a simmer; cook for 15 minutes until smooth and thickened.
Beans
- Place the beans in a a large sauce pot; coven them with water and allow the beans to stand overnight or for at least 2 hours.
- Discard the soaking water, rinse the beans, and cover them with cold water. Add the barbecue sauce, onions, ginger, chipotles, bacon, maple syrup, molasses, apple juice, tomato puree, cider vinegar, and tamari.
- Bring the mixture to a boil, reduce to medium heat, cover, and simmer until the beans are tender and the sauce has thickened, 1 to 2 hours.
