Lemon Garlic Chicken

  • ½ cup chicken stock
  • 3 tablespoons freshly squeezed lemon juice
  • 2 tablespoons olive oil
  • 1 tablespoon lemon zest
  • 2 cloves garlic minced
  • 2 teaspoons Dijon mustard
  • 1 teaspoon dried oregano
  • ½ teaspoon dried thyme
  • Kosher salt and freshly ground black pepper to taste
  • 2 pounds boneless skinless chicken thighs
  • 1 ½ tablespoons canola oil


  • In a medium bowl, combine chicken stock, lemon juice, olive oil, lemon zest, garlic, Dijon mustard, oregano, thyme, salt and pepper
  • In a large bowl, combine chicken and chicken stock mixture; marinate for at least 2 hours to overnight, stirring occasionally. Drain.
  • Heat oil in a cast iron skillet over medium-high heat. Working in batches, add chicken to the pan in a single layer and cook until golden brown and cooked through, reaching an internal temperature of 165 degrees F, about 4-5 minutes per side.
